I think the Chicken Lime Taco recipe is going to be a keeper. It’s so easy to make and very yummy.
I took the recipe times two and it made enough for two dinners for us (we’ll probably have some leftovers, depending upon how generous I am in doling out the filling on tacos. :))
When I was making these, I realized that I had forgotten to pick up salsa at Aldi this week, so I just left it out and decided we’ll serve it with the tacos when we make them up. That might actually end up working better anyway.
Next time, I think I might mix in some black beans. This would give it more flavor and stretch it a bit, too.
By the way, I thought that you’d like to know that I also made chocolate chip cookie bars this afternoon, seeing as I’m not sure we’ve had enough chocolate yet this week. Ahem. Let’s hope I don’t someday find out I’m allergic to chocolate or something. 😉

I made this the other night and it was a big success. I added Rotel and black beans with the corn which made it very good. Definitely a meal I will be bringing back out again and again.

You could make up the tacos in individual tortillas and have individual foil wrapped frozen tacos to reheat anytime. HEB has an in store coupon for the fifty count tortilla pack this week. Making the tortillas four cents a piece…

I will add my love of the 15-minute freezer cooking idea. I have never been able to really get into the freezer cooking of entire meals, but I love the idea of doing something weekly to aid in the prep work. Yesterday I chopped green peppers and processed some dried beans into the freezer for use later.
My question, though, is about chicken in the crock pot. Whenever I have made a chicken dish in it, it always tastes dry to me unless I cook a chicken with bones. Maybe I am cooking it too long?

I have made a similar recipe with pork lion roast in the crock pot that is really yummy (I got it from Real Simple Magazine). Put the pork loin in the crock pot (I trim off any visible fat), and then mix together a jar of salsa, and 2 tablespoons of the following ingredients: chilli powder, unsweetened cocoa powder and oregano. Pour the mixture over the roast and cook on low in the crock pot all day or on high for 4-5 hours. Its great with soft taco shells, cheese and chopped fresh cilantro. It makes a very tender, juicy meat, so soft taco shells work better than hard.

I made these for dinner tonight, and they were SO SO good. I made per the directions, except we used whole wheat tortillas. It was pretty bland until I added the salsa though, I think it def adds something to it…I also cooked on low for another 2 hours after adding it. Very yummy. I used 2 chicken breasts, and had enough for 2nds for everyone, and enough left over for lunch tomorrow as well. (there are 4 of us)

Any tips on how to get inspired to cook for one. By the time I get home (late evening) I have no desire to make a meal for myself and then clean it up. The most creative I’ve been lately is salad or canned soup (or eating out of course)

Whenever I cook I cook a full-sized meal, eat the one or two portions out of it, and then freeze the rest. Then I have a “frozen dinner” handy anytime I need it.

We add black beans to almost all Mexican recipes in our house. Great for you and stretch the meat just a bit further. I am really big on making one pound of meat go a long way in our house. Your 15 minute freezer cooking is inspiring me to give it a go!

I’ve been making this recipe for years (I have every Taste of home Quick cooking book since 1999) and we love it. I’ve made it with pork loin/roast as well. We also like to make this on Saturday for college football (GO BUCKEYES!) and use it as a base for chicken nachos and top with cheddar cheese, sour cream and sometimes some black beans or refried beans. We also like to melt some cheese with it and turn it into an appitizer dip. I literally make this like twice a month, per hubby’s request 😉

Ha! I was told when I was 9 I was allergic to chocolate and mustard. The mustard was not a problem, the chocolate was. For 3 years, I had to eat carob (yuck!), and get sad white chocolate bunnies at Easter and watch my brothers dip their bunnies in peanut butter-can’t do that with white chocolate! My allergist when I was an adult told me I was probably never allergic-that it is a really rare allergy and usually tied in with other things. That’s 3 years of my life I can’t get back!

This has been a family favorite of ours for awhile now! Even if you don’t use it as a freezer recipe, it is so easy and flavorful! I have added black beans before as well. I’m sure it will be fine adding the salsa before serving, but make sure you warm it up with the meat and don’t solely serve it as a topping. With the lime and chili, it is the sauce that soaks into the chicken and keeps it moist.

I need to try this. I make something very similar that I call Salsa chicken. It has black beans in it and sometimes I put in the corn. I like the idea, of the lime though, so I am adding this to my “to do” list. Here is the recipe for salsa chicken. We eat it on rice, or in tortillas. I like it best on rice. 😉

I wanted to send you a note to say letting you know how I love this 15 minute freezer idea. Even if it is a little bit longer each day, I really like the idea of putting one item (with the recipe doubled or tripled) in the freezer. It seems so much easier that way. I’m going to give it a try since I wasn’t able to pick up the ingredients I needed to do a big freezer cooking day this weekend.

Oh perfect… after your meal plan post earlier this week I looked at that recipe and put it on the menu for tonight, but didn’t have time this morning to put it in the slow cooker before I headed in to work. I got home and wasn’t feeling like making it and was struggling to decide what to do about supper, so was wasting time reading blogs and this was the first post on yours… great timing, just what I needed to see… the chicken is now in the oven (instead of the slow cooker to get it done faster!) and I’ve prepped most of the other ingredients… thanks crystal!! 🙂

This looks great and easy to make multiple batches with. I like a similar recipe from Martha Stewart where you just combine a couple of chipotle peppers with salsa, pour it over chicken thighs, and cook in the crockpot. I’m trying to double up recipes to freeze this coming month so that when naptimes roll around in the afternoon, I can use them for Christmas crafts and baking instead of making dinner.

Do you think substituting pork would also be OK? We eat plenty of chicken but I love making pork loin roasts in the crock pot and it just sounds like it might work.
