Frugal breakfast recipe: Baked oatmeal
One way we save a lot of money is to make things from scratch. Not only is it less expensive, but it also is better for you and tastes yummy, too!
Baked oatmeal one of our very favorite breakfast
recipes. It makes a big pan so we refrigerate the leftovers and use it
for the following few days’ breakfasts! Just reheat in the microwave or
oven. We often just spoon out in individual bowls and reheat in the
microwave. Be sure to top with butter, brown sugar, and milk. Delicious!
Baked Oatmeal
1 cup oil (can substitute butter or applesauce)
1 ½ cups sugar (can reduce)
4 eggs
6 cups oats
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 cups milk
Combine all ingredients in order listed. Pour into greased 9x13-inch pan. Bake at 375° for 30-40 minutes until lightly browned. Can refrigerate overnight before baking. Serve topped with butter, brown sugar, and milk.
Yields: Approximately 8-10 servings

That is my favorite recipe. Had some for breakfast just this morning.
Although I often use that amount of sugar, I find it quite sweet without any extra sugar on top! The way I eat it is with a few more shakes of cinnamon and just enough milk to make it soggy, and heat it up. :)

I really enjoy this recipe, but like some of the other readers, wondered how healthy it really is. I found a recipe on the Cooking Light website that is healthier and delicious!

I make this occasionally too - I also cut in half all the time.
I always substitute the oil w/ all applesauce and use 1/2-3/4 c sweetener - honey, molasses or brown sugar depending on my mood. I often add a mashed banana, blueberries or apples and often drizzle molasses over the top to give it a prettier look. I have also made it like normal but put in muffin tins and made muffins instead of a pan. It seems to keep nicer and is easier to serve again the next day. The half recipe makes 12 good size muffins.

We love this receipe. I made it for breakfast today. I was craving oatmeal cookies (I am 8 months preggers) and this really hit the spot. We added raisins.
